Home Made Ice Cream

Ingredients

Whipping Cream- 3 cup , CMC (Carboxy Methyl Cellulose or Cellulose gum) - ¼ tsp
Milk (Rich Cream) - 1 litre, Liquid Glucose- 1 tsp
Corn flour - 4 tsp, GMS (Glycerine mono Stearate) – 4 tsp,
Milk Powder- 8 tsp, Sugar- 1 cup,
Essence ¼ tsp


1) Add corn flour, GMS, CMC, milk powder, sugar, liquid glucose to little quantity of hot milk. Sift this and keep separate.

2) Heat the milk till it boils down to ¾ the original quantity and add (1) to this.

Stir continuously and reduce the quantity in slim fire. Beat well preferably in a mixer and keep this in freezer.

When it is half set beat again, add the whipping cream and beat again with the blender. Add vanilla essence and keep it in the freezer and allow it to set.
After 1-2 hrs check if ice cream has crystals. If so, churn it again and increase the temperature of the freezer.

While serving garnish Ice cream with chocolate wafers and grated chocolate.



Note:

• Flavor of ice cream depends on the essence used.

The same procedure can be followed to make all other flavors of ice-cream as well. You can make it with banana/mango/ any fruit of your choice. Just reduce the amount of sugar depending on the sweetness of the fruit used.
• You need to mix liquid glucose well in the hot milk otherwise it will form lumps. If you want you can mix it first in a small amount of hot milk and then mix that into the boiling milk.

• GMS and CMC are chemical stabilizers used to make the ice-creams creamy and fluffy. These are available at all bakeries by the same names.
